Our Artisan Cheeses are constantly transforming because they are a true reflection of when and what grasses our cows are eating. Depending on the seasons the cows may be eating different types of grasses with higher or lower moisture content.

Sharp, milky, tangy. A tad saltier and sharper than 1 year cheddar.

Sharp, milky, tangy. Saltier and sharper than the 2 year cheddar.

DOS LUNAS 8 YEAR CHEDDAR
Aged 8 years +
Sharp, milky, tangy. Saltier and sharper than the 2 year cheddar. It has tiny crystals that form in cheddar with time.
Uses: Perfect with wine, fresh and dried fruits. A little goes a long way with this sharp cheese.
Advisory...must be broken down to be eaten in crumbs!
